Hello again Internet, this is Charles J. West. As the title of this post subtly implies, today is the first day of my low-to-no carb diet. Already I can feel the mounting foreboding and realization of the future bearing down on me; a demon of consequence saddled squarely between my shoulder-blades, riding me not unlike a mechanical bull.
How has one day without sugar made so much of an impact? Is today's food (candy not-withstanding) laden that heavily with sugar, as to induce withdrawal symptoms this early? Am I to be a sugar-holic my entire life, unable to keep sugar in my house for fear of relapse and maddening cravings? I have a feeling it's going to be a long 4 months.
In my dreams, I am the prosey-ist; it's me. Sorry for subjecting you to that, Internet, I needed something to concentrate on (lest the shakes set in) and clicking my way through an online thesaurus granted me 15 minutes of distraction. Today is busy and so I haven't really been able to give too much detail about my diet, nor to devote much time to the blog (bluh bluh getting A's is HARD DXX) but hopefully that will change in the future :)
What I can tell you is that right now I'm just focusing on avoiding sugar, more than anything. I mean of course I am, but I'm putting more effort into that one task than is prolly necessary b/c I know I'll cave much easier to sugar than I don't know a sammich or something. I read that this... introduction stage I guess, goes away after a few days so maybe then things will be different?
If you'll excuse me, I have to go make my dinner (for the sake of the entire purpose of this blog, its chop suey w/o brown sugar n stuff)

Enter: Confectionery Artisan
Hello internet, my name is Charles J. West. My cousin, Elliot D., has been pestering me for weeks to start a blog (I'll get into why in a moment) and obviously I've caved in. I live in BC, Canada (I feel a bit uneasy revealing the city) and work in the food industries. I am a university student in the science faculty, and I hope to someday earn my Master's in Engineering or Biology; both are so interesting, I just can't decide! Thank god for student loans :o)
As for the name of my blog (It is a bit unusual isn't it lol), I very much enjoy baking! Not b/c I <3 cake or whatever (bluh bluh so many people think this i hate pastries so muuuuch DX) I just find it very relaxing and have a bit of a talent for candy-making. Hard candy, soft candy; Whichever the type, I find it challenging and satisfying. I mostly just give them away to my friends (more than one of which blame me for the failure of their diets LOL), but I will admit (you'll keep it a secret right internet? ;) ) that I keep the best candies for myself :P
...Or rather, I used to keep the best candies for myself. That's gotten me into a bit of an.... unfortunate situation somewhat recently and, at the prompting (again) of my cousin Elliot, I have decided to chronicle my journey through this no-carb (and thus, no-sugar ;_;) diet, an already difficult task made all the more challenging by the hobby I will be keeping you updated on in this very same blog. I have self-loathing issues, as you can plainly see. So you can expect updates, detailed reports, and photos pertaining to my diet and my beloved craft in the near future. Wish me luck.
I guess that's really all there is to say on the matter. I don't know how often I'll update this blog, but if I stop now it will just serve to upset Elliot.... Dear, sweet, concerned Elliot, who recommended this diet to me. I will, of course, force him to join me. (That's half the reason I will continue making candy ;P)
